What to expect from your Kinkawooka Pot Ready Mussels

We know how busy life gets. That’s why we pack all of our premium mussels ready to eat or cook. There’s no need to get your hands dirty – or your kitchen. Our mussels come cleaned, scrubbed and debearded so you can simply enjoy the pleasure of cooking mussels, without the mess… or hassle.

Meat to shell ratio

The term we use to describe the quality of our mussels is “meat to shell ratio” and that’s when we cook the mussels and assess the weight of the meat compared to the whole weight of the mussel.

Our new season crop starts in June and goes until the end of October. At this time of the year, you can expect to get 40 to 50 mussels per kilogram, with the meat to shell ratio of 38% to 50%.

Mussel connoisseurs love the small, soft and sweet flavour of our mussels. From November through the end of May, our mussels grow larger from the warmer weather and this is when you can expect to get 30 to 40 mussels per kilogram, and a meat to shell ratio of around 35% to 40%. If you like bigger mussels, then this is the time of year for you.

Inside the pack

Our mussels are inside salt water in the packet and this helps to keep the mussels alive. In every bag of mussels, you may see a few with hairline cracks on the shell. This is normal, the mussel is still alive and completely fine to cook and eat.

You may also still see a few beards left on the mussels. The beard is what the mussels use to hang onto our ropes at sea. Once you have cooked the mussels, the beards will come out easily so don’t worry if you have a few of these left in the pack.

We conduct regular inspections to make sure that only the best mussels get into our pot ready mussel packs.
