What is the Kinkawooka Way?

Most home cooks prepare mussels with the ingredients they have chosen, mixing everything together into the pot.

This is not necessarily wrong; however, it does not give your mussels the best possible preparation for your recipe. Our chef has created the Kinkawooka Way. The Kinkawooka Way is the best technique for steaming mussels.

The Kinkawooka Way adds just one additional step to the norm and it makes all the difference when it comes to the taste profile, economy and versatility of preparing mussels.

The easy first steps

Open the pack of Kinkawooka Pot Ready mussels and strain off the water. In a colander, give the mussels a quick rinse under cold water.

Heat a large pot on the stove with approximately 1cm of water. When the water is boiling, add the mussels, cover with a lid and steam them for a couple of minutes, stirring every minute or so until they open. Try to ensure each mussel comes into contact with the heat. This activates the adductor muscle, which helps to make sure they open.

Remove from the heat and strain the mussels off, keeping some of the liquid in a bowl.

When you have steamed the mussels, put them aside and begin building your sauce, and pop the cooked mussels in once the sauce is ready. The strained liquid makes an excellent stock.

Preparing your mussels the Kinkawooka way has its benefits.

The steam method without additional ingredients helps all the mussels to come into contact with undiluted clean heat from the steam. This method evaporates a large amount of the saltwater contained within the mussels that can affect the overall flavour profile.

By gently stirring the mussels, the mellow heat will give each mussel the best opportunity to open.

Keep in mind that if a few mussels don’t open, they are still perfectly fine to eat. Just prise them open with a butter knife so you don’t miss out on any of these little wonder foods.
